AUCTION LOT ROAST PROFILES

IKAWA are official sponsors of Best of Panama and have worked with Josh Tarlo to create the official sample roast profiles which we share below.

With changes to altitude, water used to brew, and your personal preferences,  you may want to make small adjustments to dial in the profiles. They perform incredibly well here in London.

TRADITIONAL WASHED

With a total roast time of 6 minutes and 40 seconds, the first 4 minutes and 55 seconds command a steady 20ºc/min RoR with a gentle decline in fan speed throughout the roast.

TRADITIONAL NATURAL

Similar to the ‘Traditional Washed’ profile above, this roast is marginally shorter, but follows the same heat application – a slow and steady climb to 197ºc at 4:55, before increasing to 205ºc over the next 1 minute 40 seconds.

GEISHA WASHED

Having dialled in and tested a range of profiles, we determined the ‘Traditional Natural” would also serve as an excellent “Washed Geisha” sample roast.

GEISHA NATURAL

This roast starts out at 100ºc and climbs a further 100ºc over 4 minutes and 55 seconds. Over the next 1:40 the roast increases temperature by a further 5ºc whilst the fan continues to decrease until 6 minutes 35 seconds, when the cooling phase of 2 minutes and 8 seconds begins.

PACAMARA

Following a similar curve to the “Traditional Natural” profile, the roast builds from 100ºc to 197ºc over 4:55 before climbing to 206ºc in the final 1 :47 of the roast. The fan speed starts 88% and drops consistently to 60% at 6:42 – and is maintained for 2 minutes and 9 seconds of cooling.
