Los Vascos, Colombia

The Tolima region has become a fast favourite for excellent coffees and is responsible for around 12% of the country’s speciality coffee production. Situated in the mid-West of Colombia, the department benefits from being in the Andean region, with two dry and two wet seasons. This means producers have the opportunity to grow, process and export two whole crops, with greater economic certainty than other coffee-belt countries.

The ASOTBILBAO and ASPRASAR associations are made up of around 100 families in the region and encourage its members to continue to invest in the most up-to-date equipment to help ensure the quality of the crop is retained throughout processing as well as retaining organic status through processing. An example of this are the parabolic patios that allow the coffee to dry, whilst remaining protected from any downpours. Due to the geographical situation of the farms, an effect called ‘relief rainfall’ is at play, which creates microclimates susceptible to short, but heavy rain-storms.

This particular lot is grown at 1650 – 1900m, resulting in a fairly dense bean. Depending on your favoured brewing method, we have found two very distinctive flavour profiles, although both have a great base-level sweetness and lingering creamy mouthfeel.

Using our espresso recipe, which is ‘Nordic Style’, you can expect watermelon, sharp pineapple, unripe mango with a black peppercorn finish. The filter recipe develops even more sweetness with ripe apricot, peach and cinnamon custard
