Kiamabara, Kenya

The Nyeri County is located perfectly between the Eastern base of the Aberdare (Nyandarua) Range and the Western slopes of Mt. Kenya. At 2,100m above sea level, the county enjoys cool temperatures and very fertile soil. These characteristics coupled with seasonal rainfall contributes to an optimal coffee growing environment. The coffee produced in this region is known for its high acidity, ripe fruit flavours and a full-bodied taste – development is slow, producing a very hard and dense bean.

The ripe coffee cherries are sorted by quality and are full-washed using traditional methods. The cherries are then fermented in fresh river water to breakdown and residual sugary mucilage. After the 6-day process, the coffee cherries are sun-dried on raised beds for 3-5 weeks before finally sorted by size and quality.

The highly dense Kenyan bean has resulted in very different espresso and filter roast recipes. Gradual heat is applied during the espresso roast to evenly dry the dense bean before a steady application of heat during the development process – first crack is very distinct. On the other hand, to achieve a shorter development time during the filter roast, heat is applied slightly more aggressively to quickly initiate the drying of the beans before tapering off to allow the residual heat to develop the beans.
