The temperature on the filter recipe increases sharply to rapidly dry the beans before tapering out into the development phase. Whereas for the espresso recipe, a temperature increase before first crack fully develops the coffee over 3 minutes.
Expect notes of lemon, cane sugar, peach and black tea when lightly roasted; and raspberry, shortbread, malt and syrup when roasted darker.
