From the Sidamo region of Ethiopia, this is a classic coffee — look out for the brightness when roasted. The processing method creates complex flavour notes and a unique aroma.

Natural coffees are dried with the cherry remaining on the bean over a period of weeks after harvest, being carefully turned for equal drying.
