We've recently moved to our new office and workshop in London Fields, up the road from our previous studio and workshop.
In this blog post we wanted to show you what goes on behind the scenes of the workshop and share some insights from the team into what it's like to make the IKAWA Pro Sample Roasters in the UK.
“Since we work directly with farmers and cooperatives, we wanted to be able to set profiles, share them with the coop and have them be able to roast coffee at origin the same as we’re roasting here. We wanted to rely on their expertise on harvest and processing and they wanted to rely on our expertise in roasting so shareable profiles allowed them that luxury .”
"I chose the IKAWA Pro Sample roaster because I could eliminate the roasting variable.
Adopting quality standards was a difficult task, it was always compromising efficiency and final volume, so we tried different approaches for sundried and washed coffees and different drying and fermentation length periods. I ended up with many lots to compare. I started comparing lots at a coffee lab but there was a variable that was always changing, the roasting. I could feel slight differences in flavor from different roasts from same samples, and it was unacceptable..."

Alfonso Tupaz is the founder of Hatch Crafted, a cold brew coffee company based in Canada and have been IKAWA customers since May 2015.

Tumi Ferrer is Head Trainer at Te og Kaffi, who are a leading roaster in Icelandic and an IKAWA customer.
He also happens to be Iceland’s Brewers’ Cup Champion, and competed in Dublin World of Coffee in the World Brewers Cup completion last month.
